Happy New Year!
My weekday cereal of choice is always granola. I usually end up with shop-bought granola but surely it’s just nuts and oats?! My first recipe to try, recommended by a work colleague, was Sarah Wilson’s coco-nutty granola from the 8 weeks to sugar free book.
The recipe was so simple with the most time consuming part being chopping all of the nuts up. I found the quickest way to do this was to break the less dense nuts (for example walnuts) by hand and use some kitchen scissors to cut the various other nuts in half. I added ground cinnamon to mine to add a sweet kick for the mornings and have been enjoying with Alpro Plain Yoghurt. I’ve included a link at the end of this post so you can try it for yourself!

The recipe is enough for 5 portions so a perfect Sunday make ready for the week ahead!
Alternatives to make the cost per portion cheaper and suggested in Sarah’s book are to add oats (making the portions go further) and using more of the same nuts rather than all of those in the recipe.
